Diane’s Diner

We eat most of our meals at Diane’s Diner, the exclusive restaurant in the Dream Machine.  Diane’s serves a variety of locally-inspired and classic dishes at very reasonable prices.  The chef works with limited kitchen facilities and creates everything without recipes.

STARTERS

Guacamole

Fresh avocado, tomato, onion, garlic, lime, and cilantro served with organic blue corn chips.

Tuna Salad

A fresh blend of romaine lettuce, green onions, grape tomatoes, avocado, olives, and tuna dressed with olive oil, lemon, and red wine vinegar.

Caesar Salad

Romaine lettuce, shredded parmesan, and a classic dressing of olive oil, fresh lemon juice, Worcestershire sauce, minced garlic, ground anchovies, and spices.

Tostadas

Small crispy tortillas baked with fresh tomatoes, green onions, cheddar cheese, and Queso Fresco, served with chipotle salsa.

 

ENTREES

Chicken Spezzatino

An Italian stew of boneless chicken thighs, kidney beans, tomatoes and other vegetables.

Spaghetti Koroluk

Creamy bolognaise sauce over spaghetti noodles.

Strip Loin

Grilled strip loin streak served with crispy rosemary potatoes.

Turkey

Roast turkey breast with pan-fried potatoes, gravy and cranberry sauce.

New Mexican Rice & Beans

Sautéed chicken with fried rice, black beans, corn, and jalapeno.

Tacos

Ground beef, lettuce, onions, tomatoes, salsa, and fresh guacamole on small, warm corn tortillas.

Burritos

Ground beef, re-fried beans, tomatoes, green onions, salsa, lettuce, and shredded cheddar wrapped in a grilled flour tortilla.

Tex Mex Skillet

Sliced grilled pork and red potatoes fried with a tangy bar-b-que sauce.

A beef burger smothered with roasted green chilies sautéed with onions and garlic on a toasted bun.

Chicken Enchiladas

Strips of chicken sautéed with tomato, green chilies, black olives, onion, jalapeno, garlic, cilantro, chili powder, oregano, salt, and pepper, wrapped in flour tortillas, covered in enchilada sauce and baked with cheddar cheese.  Served with rice, salsa, fresh guacamole, and sour cream.

 

LUNCH

Tamales

Masa filled with potato and green chili wrapped in a corn husk.

Grilled Ham & Cheese

Sliced ham and cheese with a hint of mustard on bread grilled until brown.

Turkey Quesadilla

Roast turkey, cheese, and fresh tomato layered between grilled flour tortillas.

Greek Salad

Chopped cucumber, green pepper, roma tomato, black olives, and feta cheese in a light dressing

Picante Cristo

Ham, pepper jack cheese, and red onion sandwich dipped in an egg and milk mixture and fried to a golden brown.

 

BREAKFAST

Banana Oatmeal Muffins

Healthier muffins containing oatmeal, ripe bananas, fat free vanilla yoghurt, and cinnamon.

Pancakes

Klondike cakes with mixed fruit and syrup.

Oatmeal

Hot oatmeal with a mix of fresh cut bananas, apples, oranges, and strawberries.

Crepes

Thin crepes with melted butter and sugar or mixed fruit.

Omelette

Onion, tomato, greed pepper, and cheddar omelette with roast potatoes, buttered toast, and jam.

Breakfast Burrito

Scrambled eggs with red onion, sweet orange pepper, grape tomatoes, cheddar cheese and Queso Fresco topped with chipotle salsa and wrapped in a grilled flour tortilla.

Banana Double Chocolate Chip Muffins

Sweet muffins made with ripe bananas, dark chili chocolate, and Ghirardelli chocolate chips.  Equally good for dessert!

Taking it on the chin — Mountain Biking in McDowell Mountain Park

Our friends Kevin and Annette flew from Vancouver to Phoenix to visit for a few days.  They’re active people, so we planned 3 full days of mostly outdoor activities.  On Day 1 we hiked Pinnacle Peak, the ‘Grouse Grind’ of Scottsdale, though it’s not as challenging.

That afternoon we enjoyed the Fountain Hills Festival of Arts and Crafts, a twice annual outdoor show, where we consumed a giant bag of kettle corn (OK, it was mostly Kevin and me).

On the morning of Day 2 we headed out to McDowell Mountain Regional Park, a popular place for mountain biking in the Phoenix Area.  With the addition of 2 borrowed mountain bikes (thanks!), we had enough for 4.  We had a few hours to ride and so we headed north on some trails that I had explored a few days earlier named Wagner, Granite, Bluff, a short section of Pemberton, and Rock Knob.

Everything was going great.  It was sunny and the temperature was perfect for cycling, a lot warmer than Vancouver!  The trails were good and the terrain moderate.

We climbed gradually as we pedaled further and further away from the campground where we began our ride.

We turned around at the park boundary, aware that we had to get back in time for our planned afternoon activity.

The return trip was mostly downhill.  Easier and faster.  Aside from a small section as we crossed a little valley, it was not difficult.

Diane was having a good time too, enjoying her first mountain bike experience.

Then, with less than a mile to go, things took a turn for the worst.  While making a left-hand, off camber turn, Diane drove off the trail.  Her front tire slide in the loose gravel and she fell forward and to the left.  Luckily she avoided serious injury to her hands and body by catching herself with her face.

Diane was a great sport about the whole thing, despite the sand embedded in her chin and the blood running down her neck

She was very concerned though about bleeding on her precious Blacka Chicken jersey.  She splashed some water on her face and cautiously rode back to the car where she changed and cleaned up a bit in the campground restroom.  Kevin had a large bandage in his backpack which she put over her chin.  Her top lip started to swell as we drove back to Scottsdale.

We had tickets to see the ‘World Champion’ San Francisco Giants play the Los Angeles Angels in the opening game of the Cactus League, the series of baseball games that take place in Arizona during spring training.

We had great seats about 10 rows back on the 1st baseline.

At the end of the 3rd inning, Diane and I went to the ball park’s first aid room.  They used distilled water to clean her wounds, but didn’t have a good replacement bandage.

Instead they used a giant gauze pad and some white tape, creating a small Santa Claus beard.

Remarkably unphased by the whole thing, Diane bought a hotdog afterward to take back to her seat.  Eating that hotdog with the ‘chin sling’ in place was quite a feat.

Except for the bike crash, it was another great day with our friends.  I was very impressed with how Diane handled with whole thing.  She even went out to a honky-tonk, greasy-spoon for dinner that evening!

My Birthday in Paris (Guest Post)

Paris.  I have long dreamed of the day that I would visit this wonderful city.  I always envisioned it to be romantic, chic and alluring in a peaceful kind of way.  For me it was all of that.

Thanks to Patrick’s perfect planning we arrived in Paris on my birthday.  We got up early and took a train into Paris.  The 45 minute journey only helped to build my anticipation.  The weather was not the best (windy, cold and with rain on and off), but how could I complain when I was headed for Paris.

Of course our first day in Paris would not be complete without a tiny bit of excitement.  We began at a quaint café for a small bite to eat and some espresso.  A perfect way to start my day.  We ordered a toasted baguette sandwich (very French) and a café Americano (not so French).  We were ready to go with the coffee and baguette in hand, but had difficulty paying.   Neither our visa nor our bank card would work at this shop, and we did not have enough Euros with us as we hadn’t been to a bank machine yet in France.  The very nice man behind the counter (originally from Afghanistan and who spoke excellent English) told us where there was a bank machine.  Patrick set off and I waited.  And waited.  And waited.

Of course I drank my coffee, but thought I best hold off on the sandwich in case no money arrived.  Patrick was gone for what seemed like hours.  At one point the nice man said, “He’s gone a long time.”  I smiled and agreed, not sure what else to say.  What I was thinking was “do you want your sandwich back?”  After another 10 minutes went by the nice man said he thought I should go look for Patrick.  I really thought I should stay put.  There’s no use both of us being lost, but he was insistent.  So off I went.  I had no idea where I was going but thought I would walk around for a minute to make it look good.  I was relieved to see Patrick as I was heading back to the coffee shop.  It turns out that the two bank machines that he found (both from the same bank) would also not accept our debit card so he ended up having to take a small cash advance on his Visa.  We paid the nice man (he even reheated my sandwich), and we were finally off to see the Eiffel Tower.

It was a short subway ride from the café.  As we approached our stop I was really getting excited.  We exited the train and headed up the stairs to the street.  I turned around and there it was, larger than life.

As I first lay eyes on this magnificent structure I gasped!  I am not sure what I expected but it was much bigger than I thought.  I wouldn’t call it beautiful though.  It’s an enormous metal structure painted brown.  For me the beauty came from its size, strength and view of the city.  There were huge lines to take the elevator, so we hiked up the stairs to the viewing platform, not letting the howling wind and rain deter us.  When we reached the top the view of Paris was stunning.  I loved it.

We spent the rest of the day wandering the famous boulevards of Paris.  We finished off the day with an incredible French dinner, some great wine and a lovely birthday kiss.  It was the best birthday.

Preparation — Diane’s Perspective

To say the last month has been stressful would be a bit of an understatement. As Patrick already told you in his blog post, things have been a bit crazy for us. He has worked extremely hard getting things ready for our trip, finalizing stuff for his parents’ estates, etc. Yes, we’ve done lots of shopping which under any different circumstances, I would say would be terrific. However, with a list that measures as long as the height of Kilimanjaro (4 miles), I don’t think that even Paris Hilton could go the distance. One list after another and I thought that I might lose my mind. After organizing, sorting and reviewing several times it was afternoon on Saturday (departure day) and we were finally ready to start packing. I must say that even I was a bit impressed with our ability to get everything into two 38 litre packs. This really was due to Patrick’s attention to detail and endless lists, but boy oh boy it was a tough process for me. You will need to check back with me in a few months to see how I am faring with only one pair of shoes, a pair of sandals, and limited clothing.

Patrick and I had lots of help from family and friends in preparing for our world adventure. I want to tell you all again how much we appreciate your support along the way. Even my precious Skyler thought he should test out my new down North Face jacket for comfort and warmth. I think he thought that it would pass the test. What do you think?

Patrick and I also tested out our stuff by washing and wearing it several times to make sure that everything fit right and would be appropriate for our trip.

Waxing our boots with the use of Kevin’s hot air gun worked great and hopefully this will keep the rain/snow out when we climb Kili.

But by far for me, the most challenging part of preparing for this trip was saying goodbye to family and friends. The goodbye parties were greatly appreciated and we both feel extremely privileged to have such great family and friends. We love you all and will miss you.

I know that we are blessed to have an opportunity to embark on such a fabulous adventure and we are both looking forward to sharing our experiences with you. I am sure that I will be feeling home sick much sooner than later so please feel free to post your comments and send email.
